Allan Hesry is a young chef from Quimper in Brittany. He took his position as Head Chef in MAMIE’S kitchens in April 2017.
Allan started his career in one of Quimper’s most distinguished establishments before moving on to honing his skills in Pont l’Abbé where, under the teachings of Jean-Pierre Lepeuve, he finalized his education as both cook and crêpier. He describes Jean-Pierre Lepeuve as “a passionate chef whose availability and enthusiasm for transmitting knowledge set for him incredible examples both personally and professionally”.
In 2017, Allan accepted the position at MAMIE’S with eagerness because of his and the restaurant’s shared regional values and the importance for both of working with Breton products
Allan is “very proud of his Breton origins and of this rich and traditional culture based on technical know-how. He feels deeply rooted in the land he grew up despite having left since.”
