Chef Patron Frédéric Colin is the man behind Brasserie Gavroche, the venue where authentic Parisian classics are prepared and presented from age old recipes.
His extensive culinary experience includes working in Michelin star establishments in Paris such as 2 Michelin Star Chef Bernard Joinville at Restaurant ‘Lasserre’, 2 Michelin-Star ‘Clos Longchamp’ and 3 Michelin Star Restaurant ‘Ledoyen’, as Chef de Partie under famous Chef Christian Lesquer.
He also bore the position of Executive Chef at The St. Regis Singapore since its opening in 2008,
and prior, the exclusive St. Regis Resort Bora Bora in French Polynesia, where as Executive Chef, he opened three remarkable dining destinations including renowned chef Jean-Georges Vongerichten’s signature restaurant.
Growing up and helping out in his grandfather’s restaurant in Paris, the love for great produce and the passion for cooking runs in his blood.
