I have been raised in a family where food is the essence of the house. I believe the passion for food got into my blood through my both grandma and of course my mother and my step-mother, the love for food was born!
Since my youngest age as I can remember we use to have many family gathering during vacation, weekend or any occasion I have to say which I think, indirectly lead me to the world of the hospitality.
Welcoming the guest, taking care of them and bringing them happiness when they try some dishes they never experimented.
Being from Brittany in France I have the luck of having a great array of regional product such as oyster, scallops, the well-known galette and crepe and some amazing cheeses and charcuterie and more. It able me to discover so many ingredients which are all around France.
Beside this, my 20 years of traveling gave me the possibility to infused flavors from my global travels with ingredients and cooking spirituality that I learn in the different country that I worked such as France, Germany, Ireland, England, Dubai, Abu Dhabi, Seychelles, Antigua & Barbuda and Thailand.
During my career I had 2 mentor, both of them great chefs in all aspect of the job.
The first chef help me on how to educate my palate to the best, taste all the different flavours and bringing them together in harmony.
And my second mentor taught me how to be accurate and perseverant in every action you start.
Of course, both of them share with me the love, passion and commitment for our beautiful industry.
There is no better joy in my opinion to see a guest smiling when tasting the first spoon of his plate, those moments make all the hard work and long hours that we are behind our cooking stove in our industry coming last.
